About Chef Marcos Barboza

Chef Marcos Barboza is professionally trained, and a graduate of L'Academie de Cuisine, the premiere culinary school of the Mid-Atlantic region. The classic and modern French techniques he learned at school allowed him to work in some of the most sophisticated and unique fine dining restaurants of Washington, DC. He also worked as an assistant at several professional culinary classes through L'Academie de Cuisine's recreational school. In July of 2003 he had the honor of assisting the top Washington area chefs at the Taste of the Nation, an annual fundraiser supporting the fight to end hunger. He is also a proud member of the American Personal Chef Association.

Chef Marcos Barboza was born and raised in Rio de Janeiro, Brazil to a large family with Portuguese and Italian ancestry. He has been in the United States since 1993. Marcos learned to cook watching his parents (specially his father), and grandmothers whip up the family specialties. Cooking had always been a natural talent, and to the amazement of family and friends, he could prepare a full family meal -- sometimes for up to 20 people -- by the time he was 12 years old. Growing up on the shores of the Atlantic Ocean, in the beautiful city of Rio de Janeiro, he developed a passion for seafood, romantically referred to, in his native language (Brazilian-Portuguese) as "Fruits of the Sea".

"Enchant, stay beautiful and graceful -- But do this: EAT WELL. Bring the same consideration to the preparation of your food as you devote to your appearance. Let your dinner be a poem, like your dress." (Charles Pierre - 1825-1888)
